Research has shown that 47% of people have low vitamin C levels. Those with the lowest vitamin C levels had higher BMI, waist circumference and blood pressure than those with normal vitamin C levels. Some good sources of vitamin C are red bell peppers, broccoli, cauliflower, romaine lettuce, papaya, strawberries, oranges and kale.
A Yummy, simple dressing

For a simple balsamic vinaigrette dressing combine 3 tablespoons balsamic vinegar, 2 tablespoons water, 1-tablespoon extra virgin olive oil, ¼-teaspoon sea salt, ¼-teaspoon basil and oregano, dash of ground black pepper. Shake well before mixing into salad.
