Root Vegetables!
Root vegetables absorb high amounts of minerals and other nutrients from the soil; high in complex carbohydrates & fiber, contain antioxidants, have significant amounts of Vit C and Beta carotene. Root vegetables offer you these same properties, making you feel grounded both emotionally and physically and increasing your stamina and endurance. Here’s one of my favorite recipes for root vegetables, I don’t use the pumpkin, use the butternut squash already cubed and throw in brussels sprouts.
